Mexican Pizza

Here's what you'll need

1 Ezekiel 4:9 Sprouted Grain Tortilla (Taco Size)

3 oz. Organic Oven Roasted Chicken Breast, skinless

¼ Cup Mild Salsa, if you like it hotter go for it

1/4 Cup cooked Black beans

½ Cup Red Peppers, chopped

2 Tbsp. Green Chili Peppers, diced

1 Cup Spinach

1/2 Cup chopped Kale (with stalk removed)

2 Tbsp. Organic Mozzarella Cheese, shredded (you can easily substitute with hummus)

¼ Cup Avocado, sliced

1 Tbsp. Olive Oil

Make it

Preheat oven to 450 degrees and lightly rub pan with Olive Oil. On the stove top cook Bell Peppers, Green Chilies, Black Beans, Kale, and Spinach on medium heat until Spinach and Kale are wilted. Spread Salsa on Tortilla with Chicken and veggie mixture. Sprinkle with Cheese or leave plain and bake until cheese melts or approx. 5 minutes and top with Avocado slices. OR If you opted for no cheese, spread the Hummus on top of everything once out of the oven and then top with Avocado slices.
