Baby Bok Choy and Quinoa Power Meal


Here’s what you’ll need

Cooked Quinoa
Chopped Red Onion
2 Cloves of Finely Chopped Garlic
Organic Olive Oil
1/4 Cup Pine Nuts
1 Chopped Red Pepper
10 Chopped Cherry Tomatoes
4 Baby Bok Choy – You can leave these whole or cut in half
Celtic Sea Salt to taste


Make it

Start off by sautéing your onions and garlic, once the onions are a bit glassy add in your pine nuts and Bok Choy, allow to sauté until bright green. Next add in your red pepper and Celtic sea salt, cook for about 5 minutes.  Add in the tomatoes and cooked quinoa and sauté for a few more minutes and serve!
